Tony Ridgway recently anointed Emily Duncan as Tony's Off Third Pastry Chef. Emily is a graduate of the Pittsburgh Institute of Culinary Arts. She externed at the Breakers in Palm Beach, then was assistant Pastry Chef at several Florida Ritz Carltons. Before taking over at Tony's Off Third she was the Executive Pastry Chef at The University Club in Chicago.

The hallmark's of Emily's style are pastries with maximum flavor and minimum sugar, and contrasting colors, textures and flavors. Everything is prepared from scratch daily with superb ingredients, many of which are imported from France,

including flours, fruit purees and chocolate.
